The main flaw of a thank you note is that the recipient can discern that it was one of many. A wedding set presents a challenge that none of the other gifts can. Roughly one hundred and twenty notes, each of them individually thanking someone for a gift and each of them being expressed as a written note, and not filled in.

Yes, and mostly bookkeeping. The writer uses your list and notes how many openings and closings have been used, then rotates them. The bulk of the differentiating is in the gift detail which is why we ask for it even if you recall only parts of the gift.
Most guests still follow the convention of sending favors or requests for interviews within a week and sending wedding gifts within three months. Gifts should never be sent late. An apologetic letter explaining the lateness is better than a letter attempting to explain the gift is not truly late.
